Why Dairy Free Milk?

Dairy is a tricky tricky food. It’s one of the most common food sensitivities and allergies. Why? Well, I am a believer that it is what we have done to our modern dairy, at no fault to the cows or milk themselves.

Although I can tolerate some dairy products, when it comes to milk, I opt for dairy free almond, coconut, cashew, or rice milks when I need them in recipes. It’s often difficult to find a *great* dairy free milk, though. Most have added sugars or funky thickeners or additives that I just want to avoid.

I have seen so many renditions of store bought and homemade nut milks, but I have never come across pistachio milk before! (Not saying I invented it. I am sure someone out there has done it).

I love pistachios and I love their green color even more! They make a tasty dairy free nut milk.

Homemade Pistachio Nut Milk (Dairy Free, Paleo, Refined Sugar Free)

Homemade Tips

  1. You want to soak your pistachios (for a few hours or over night). When they are soaked, they are softer (creamier milk!) and it makes the nuts easier to digest.
  2. Use a decent blender. The one I have is pretty old but still blends really nicely.

I tried using a cheese cloth at first, but trust me, don’t do that! It is so much messier and the mesh is not as fine as the nut milk bag, so it left some pieces in my pistachio milk.

I can safely say my pistachio milk stayed good for about a week in my fridge before I finished it. I didn’t keep a test batch going longer, but I would say since this is homemade with no additives, a week to 10 days is a good time frame.

Homemade Pistachio Milk (Dairy Free, Paleo, Refined Sugar Free)

Ingredients

1 cup of de-shelled pistachios

water to soak over night, plus 4 cups to blend

1/2 tsp sea salt, I like Celtic sea salt and Redmond real salt

1 1/2 tbsp maple syrup

1 1/2 tsp vanilla extract

Instructions

  1. De-shell the pistachios if needed until you have 1 cup’s worth. Place in a large bowl and fill with filtered water. Let sit overnight or for several hours.
  2. Drain the water and rinse the pistachios. Add them to a blender with 4 cups of water. Rinse out the large bowl.
  3. Blend until it looks liquified, then place your nut milk bag (get 10% off with my affiliate code, “girlinhealing“) inside the large bowl and pour the pistachio milk into the nut milk bag. Squeeze the bag so as much liquid comes out as possible and you are left with the pulp inside the bag.
  4. Rinse out the blender and return the pistachio milk to it. Add the sea salt, maple syrup, and vanilla extract. Blend briefly to mix.
  5. Store your pistachio milk in glass jars, like these cute ones from Amazon!

Notes

I consumed my batch within around a week. I am confident it will last longer, but probably not as long as a store-bought version.
