Kale: A Powerhouse of Nutrients

I love kale!

And no, I didn’t jump on the kale bandwagon a couple of years ago. It is truly a green that I enjoy eating.

Look at some of these nutrition facts in 1 cup of chopped kale:

  • 684% of the recommended daily value of Vitamin K
  • 206% of the RDV of Vitamin A
  • 134% of the RDV of Vitamin C

It’s kind of remarkable, isn’t it?! There are even more impressive stats on the popular green you can read up on, here.

I love it lightly sautéed and seasoned as a component of breakfast, lunch, or dinner. But if you still aren’t sure about kale, these sweet kale chips might be the way to your heart.

 

Cinnamon "Sugar" Kale Chips

 

Sweet Twist

You can really add ANY of your favorite seasonings to kale chips. I’ve experimented with a few savory blends. But, I’ve never seen sweet kale chips done and sometimes I miss sweet snacks.

And who doesn’t love the cinnamon-sugar combo? It’s one of those matches made in heaven.

But, of course I didn’t use that nutrient-void inflammatory white stuff! That is what the blessed coconut sugar is for.

If you haven’t tried coconut sugar yet, you are truly missing out! It has a deeper depth of flavor than white sugar. It’s rich and resembles brown sugar.

It’s a great sweetener option and it tastes so decadent.

 

 

If you want them extra flavorful, you can sprinkle on more cinnamon and/or coconut sugar when the chips come out of the oven.

Cinnamon “Sugar” Kale Chips

Ingredients

Scale

3 cups of kale greens

1 TBS olive oil, or oil of choice

1 tsp cinnamon

1/2 tsp coconut sugar

Pinch of salt

Instructions

  1. Tear kale off of the ribs or use kale already removed.
  2. Put kale in a medium sized bowl with the oil and seasonings.
  3. Toss and massage kale with your hands until everything is well coated.
  4. Arrange on a tray lined with parchment paper, spreading the kale in a flat layer.
  5. Bake for 7 minutes at 350°F.

 

Notes

These retain the best crunchy texture when eaten in the same day. This makes a small batch, so they won’t last long anyway!
