Easy, Healthy, & Make-Ahead

Since becoming a Mom, I’m constantly trying to come up with fast and healthy breakfast ideas. Mornings always go by so quickly – workout, shower, eat, write, get Henry up, repeat. So the last thing I want to do is stare into the depths of my fridge looking for inspiration or stand over the stove trying to recreate something from last night’s Top Chef episode. So, quick & easy but HEALTHY is the name of the game these days. Enter chia pudding.

The Chia Craze

The chia pudding revolution started a few years ago. I’d be surprised if you haven’t tried a version of it – vanilla, chocolate… vanilla… chocolate. These flavors are obviously delicious, but they’re not very exciting and almost always call for a sweetener. I’ve tried sweetening it naturally with fresh fruit or dates but I was craving a change and I wanted something that would be nutrient-dense for my little guy too. His favorite foods are avocados and bananas, inspiring me to create this Avonana Chia Pudding.

Chia for a baby you say? Totally. Chia seeds are high in protein, fiber, calcium, good fats, and have mega amounts of minerals. They’re also easily digested by everyone and make for the yummiest pudding recipes ever.

You’ll need to make this recipe the night before, but don’t worry – it literally takes 5 minutes to prep. E-Zaaay.

 

I love this recipe because it doesn’t call for any added sweetener. I mean, you can, but it’s totally unnecessary when you’ve already added a banana, aka nature’s candy. I hope you enjoy this quick, easy, (but most importantly) healthy & satisfying breakfast as much as Henry & I do!

Avonana Chia Pudding (Dairy & Sugar Free)

Ingredients

Scale

1 1/4 cup almond milk

1 ripe avocado

1 ripe banana

2 tsp vanilla extract

1 TBS chia seeds

Instructions

  1. Place all ingredients into a food processor or Vitamix until well combined.
  2. Pour into individual glass jars and store in fridge.
  3. Let set for at least 2 hours, preferably overnight.

 

Notes

The top of the pudding will likely brown overnight because of the natural processing of the avocados and bananas. Don’t be alarmed –  it’s just as delicious.😉
