What is AIP?
Are you thinking about or have you already started implementing the autoimmune paleo/protocol (AIP) elimination diet? This ebook, 30 Minute Meals for the Paleo AIP is a goldmine!
The AIP elimination diet was created specifically for those with autoimmune conditions to begin the recovery process and pinpoint food sensitivities along the way. As you know, food has a lot to do with inflammation and triggering autoimmune reactions. By eating foods that agree with us (#bioindividuality), and ensuring we are loading up with nutrients, we are helping out bodies stay healthy.
AIP is a stricter form of paleo, but it’s not meant for anyone to be on permanently. The elimination part of the diet is the first part and it lasts anywhere from 30-90 days, depending on the success of the person going through it. Foods are then reintroduced one at a time and slowly, and the person takes note of any returning (or new) symptoms.
Did you know I am an AIP certified coach? I went through the practitioner training program created by Sarah Ballantyne of The Paleo Mom, and Mickey Trescott and Angie Alt, both who went through the Nutritional Therapy Association (like I did!). I support people transition to a health-promoting diet that is often full or partial AIP.

Ingredients
2 pounds carrots
1 pound parsnips
2 cups bone broth
1 cup coconut milk
2 strips of bacon
2 garlic cloves
1/2 yellow onion
3 tbsp olive oil
2 tsp unrefined salt
Instructions
- Bring 8 cups of water to a boil in a large stock pot.
- Peel and chop the carrots and parsnips. Mince the garlic, dice the onion, and cut the bacon into chunks.
- Add the carrots and parsnips to the boiling water until fork tender (10-12 minutes).
- Drain the water through a strainer in the sink. Keep the carrots and parsnips aside for now.
- Put the same pot back on the stove and turn the heat down to medium. Add the bacon.
- Once the bacon starts to produce grease, add the onion. After about 1 minute, add the garlic.
- Remove the bacon once it is cooked and set aside to drain on paper towels.
- Add the broth, coconut milk, sea salt, carrots, and parsnips to the pot. Stir well.
- With an immersion blender or a high-powered blender in two batches, blend the ingredients well until it is completely smooth and combined.
- When serving, top with the bacon bits. (Optional: top with avocado).
