AIP Creamy Carrot Parsnip Soup with Bacon Bits from “30 Minute Meals for the Paleo AIP” ebook!

Ingredients

2 pounds carrots

1 pound parsnips

2 cups bone broth

1 cup coconut milk

2 strips of bacon

2 garlic cloves

1/2 yellow onion

3 tbsp olive oil

2 tsp unrefined salt

Instructions

  1. Bring 8 cups of water to a boil in a large stock pot.
  2. Peel and chop the carrots and parsnips. Mince the garlic, dice the onion, and cut the bacon into chunks.
  3. Add the carrots and parsnips to the boiling water until fork tender (10-12 minutes).
  4. Drain the water through a strainer in the sink. Keep the carrots and parsnips aside for now.
  5. Put the same pot back on the stove and turn the heat down to medium. Add the bacon.
  6. Once the bacon starts to produce grease, add the onion. After about 1 minute, add the garlic.
  7. Remove the bacon once it is cooked and set aside to drain on paper towels.
  8. Add the broth, coconut milk, sea salt, carrots, and parsnips to the pot. Stir well.
  9. With an immersion blender or a high-powered blender in two batches, blend the ingredients well until it is completely smooth and combined.
  10. When serving, top with the bacon bits. (Optional: top with avocado).
