Peaches are one of my favorite summertime fruits. Aside from eating them raw, sautéing for a dessert, adding them to pies, or even grilling them, peaches contribute a pop of color and a bite of freshness on a summer salad.
As a kid, I devoured them. Attracted by the fuzzy skin and overjoyed with the sticky juice running down my face, I was sold.
We had a peach tree for a little while growing up. I got so excited to check on it and see the magic that were small, bright peaches hanging sturdily off their branches.
My family and I enjoyed that tree and its fruit for a few seasons, but ended up taking it down after needing a lot of pesticides to keep other animals and bugs from eating them.
As soon as organic peaches hit the stores, I come home with a bundle each week, along with other stone fruits like nectarines and plums.
Peaches- What Are They Good For?
Besides being dang delicious, the nutritional profile and benefits of peaches is something to be excited about.
In a 2014 study experimenting with the effects of polyphenolics in peaches with breast cancer patients, “Results showed that tumor growth and lung metastasis were inhibited in vivo by peach polyphenolics…” The study recommends breast cancer patients eat two to three peaches a day!
Move over apples, a peach a day is more like it.
The homemade strawberry-lime dressing is just zesty enough. And, oh, it’s pretty nice to look at, too.
I don’t know about you, but for me to want a salad it has to have some exciting ingredients in it, like in this Summer Chicken & Peach Salad.

Summer Chicken & Peach Salad with Strawberry-Lime Dressing
SERVES 4 AS A SIDE OR 2 AS A MAIN DISH
Ingredients
For the salad:
- 8 cups spinach
- 4 TBS hemp hearts
- 2 sliced peaches
- 8 sliced grilled chicken tenders
- 1 diced avocado
For the dressing:
- 2 TBS avocado oil
- 7 strawberries
- juice of 1 lime
- 1/8 tsp sea salt
Instructions
- In a large bowl, add the spinach, hemp hearts, peaches, chicken, and avocado.
- In a blender, add all of the ingredients for the dressing and blend until it’s smooth without any chunks.
Notes
Depending on how much dressing you like, there may be some leftover.
