Spring means bright, light, and fresh meals! I am so excited for my favorite season to be here. Why not celebrate with the season’s bounty of organic strawberries and spinach plus avocado and bacon?
This salad can easily be made in larger quantities so you can prepare this for guests at your backyard party or pack along for a picnic. Swap the strawberries for another berry if you prefer!
I am always thinking about new ways to enjoy vegetables and greens. Salads aren’t usually my first choice when I go out to restaurants unless there is something super intriguing on the menu. Even some of the “hipster” “new age” types of salads are becoming overdone!
Oy.
There are plenty of textures, flavors, (and nutrients!) in this salad. And topped off with a lemon-thyme vinaigrette that’s so easy you could make it in your sleep.

Strawberry Avocado Spinach Salad with Lemon Thyme Vinaigrette
- Prep Time: 15 minutes

Ingredients
- 2 pieces bacon, chopped
- 3 c. spinach
- 6 strawberries, quartered
- ½ an avocado, cubed
- ¼ c. olive oil
- Juice of 1 lemon
- 1 tsp. honey
- ¼ tsp. sea salt
- 1/8 tsp. dried thyme
Instructions
- Set a medium-sized skillet on medium-high heat. Once hot, add the bacon slices. Flip once the bacon is golden brown on one side, or done to your liking.
- In a salad bowl, add the spinach.
- De-stem and slice the strawberries and cube the avocado. Place on top of the spinach.
- Remove the bacon and drain on a paper towel-lined dish. Rough chop and add to the salad.
- Now prepare the dressing. Add the olive oil, lemon juice, honey, sea salt, and thyme in a dressing container or a bowl. Stir swiftly to combine everything well.
- Drizzle over the salad and toss to coat the salad evenly with the dressing.
