Hi friends! It’s that time again for pumpkin recipes. This delicious Pumpkin Chocolate Chip Cookie that is Paleo and AIP (Autoimmune Paleo) compliant is a guest post by Molly Leavitt from Vivra Wellness.
These Paleo chocolate chip cookies are a classic fall cookie taken to a new level with melty chocolate chips. Soft, chewy, and perfectly spiced, they’re about to become your new favorite fall treat. Made with simple, wholesome ingredients, all you need is one bowl and about 20 minutes to make these grain-free, dairy-free and AIP pumpkin cookies.
You absolutely still can eat delicious treats when eating healthy. These cookies are proof!
PrintPumpkin Chocolate Chip Cookies (AIP, Paleo)
Ingredients
- ½ c coconut flour
- ¼ c arrowroot flour
- ¼ c coconut oil
- ¼ c pumpkin puree
- ¼ c maple syrup
- ½ c dairy-free chocolate chips* can sub carob chips or dark chocolate w/o added sugar
- 1 tbs grass-fed gelatin powder *use code “girlinhealing” for 10% off
- 1 ½ tsp cinnamon
- ¼ tsp ginger powder
- ¼ tsp cloves
- ½ tsp baking soda
- Pinch of salt
Instructions
1. Preheat the oven to 350° F and line a baking sheet with parchment paper.
2. In a medium mixing bowl, combine the coconut oil, pumpkin puree, and maple syrup and stir to combine.
3. Mix in the dry ingredients, and stir well until a dough forms. Fold in the chocolate chips.
4. Form the dough into 1” balls, place on the cookie sheet and flatten slightly with the palm of your hand.
5. Bake at 350°F for 10-12 minutes. Remove from the oven and allow cool for 5 minutes before carefully moving to a cooling rack.
6. Enjoy immediately or store in an airtight container for up to 5 days.
