What’s better in the summer than grilling all the foods?! Grilling can be intimidating

because food can go from perfect to burnt so quickly. However, after going through this recipe you will see how easily grilled zucchini can be!

 

 

Zucchini was always a popular summer vegetable choice, but with zoodles (zucchini noodles) gaining popularity over the last few years, I think zucchini gained a new superstar status.

Zoodles are great, but nothing beats slicing and cooking a veggie #oldschool style.

Since zucchini is delicate (can be punctured easily) and is already a “softer” vegetable, searing the vegetable adds a texture contrast, so the zucchini is not made softer or mushy, but rather, firm and has a bite to it.

I kept the skin on, but you can remove it if you’d like. I like the color it adds and it might even help the zucchini hold up to the grilling heat. If you are in a flare up and are removing all fruit and vegetable skins, this would be a good reason to remove the skins here.

The summer squashes are full of nutrients, so eat up! Just a few of their nutritional benefits include copper, magnesium, phosphorus, manganese, and vitamin C, as well as many other micronutrients.

Italian Grilled Zucchini

Ingredients

Scale
  • 2 zucchini
  • 2 garlic cloves
  • ¼ c. avocado oil
  • 2 tbsp. apple cider vinegar
  • 1 tsp. sea salt
  • ½ tsp Italian seasoning
  • ½ tsp onion powder

Instructions

  1. Trim the ends off of both zucchini. Slice into quarters. Add to a plastic food storage bag.
  2. Mince the garlic. Add that to the bag along with the avocado oil, vinegar, sea salt, Italian seasoning, and onion powder. Marinate for 1 hour or overnight.
  3. After the zucchini has marinated, heat up the grill to medium-high. Once hot, layer the zucchini across the grates. Check after 10-15 minutes. Once you see grill marks, flip over for another 10 minutes.
  4. Optional: serve with fresh lemon wedges.
