Avocados are so trendy, but that’s great because they are so good for us! Besides just slicing one up to eat, making guacamole is a simple appetizer or snack idea. This variation is even AIP elimination-phase compliant!
So, what makes the avocado so mighty? Here are some reasons why we should all be eating avocado:
- Avocados are FULL of healthy fat, mainly monounsaturated fat. We need a variety of fats, excluding the seed oils and anything labeled “hydrogenated.”
- Avocados contain a wide array of other vital nutrients like pantothenic acid (vitamin B5), fiber, vitamin K, copper, folate, vitamin E, and more!
- Going along with #2, they are a nutrient-dense source of calories. Unlike junk food that may be marketed as low calorie but is devoid of any useful nutrients, you can a lot of bang for your nutritional buck with avocados!
Awesome, right? But if you want more reasons to celebrate the avocado, you can even benefit from using the oil on your skin! In one study, topical avocado oil helped speed the recovery time of wounded rats and was shown to increase their collagen synthesis and decreased inflammatory cells.
And also, it’s creamy and delicious!
When it comes to guac-making, you are welcome to eat it with a spoon (I won’t tell) OR have a bunch of healthy dipping choices as the vehicle to get more guac into your mouth.

Here is my list of more dipper ideas! Note not all of these are AIP elimination phase compliant (or totally paleo) so double check if that is your goal.
- Any fresh fruit or veggie cut up like cucumber, radishes, or even apples
- Other brands of AIP/paleo plantain chips (or homemade)
- Siete tortilla chips
- Baked veggie chips
- Baked potato or sweet potato wedges
- Pickles
- On top of hard boiled eggs
- Avocado toast on GF or paleo bread or sweet potato toast
- Zucchini fries
- Simple Mills crackers
- Laiki rice crackers
- Smear on additive-free deli turkey
Hosting a party? This batch is good for a small crowd (or a few people on a serious mission).

Ingredients
5 avocados
2 minced shallots
1 tsp garlic powder
1 1/2 tsp sea salt
Juice of 1 1/2 limes
Optional: chopped cilantro or parsley, lime wedges to garnish
Instructions
Add the avocado (de-skinned and de-pitted) to the bowl with the rest of the ingredients. Mix really well to the consistency you like. A potato masher is helpful here! Serve with a variety of foods to dip in.
