Chocolate Sunflower Seed Butter Cups

Even though my cravings for junky foods are not all that common since I started livin’ the real food lifestyle to manage my Crohn’s symptoms many moons ago, sometimes you want a piece of milk chocolate artificial-filled peanut butter cup!

Instead of buying these treats in the store, I can satisfy my craving by making my own!

I do not tolerate peanuts, but if you do, feel free to use your favorite high-quality organic peanut butter or another nut butter. I used sunflower seed butter for the nut free folk (and my sister is tree nut-free, so I wanted her to be able to enjoy them too. She gave them a thumbs up).

When you are feeling the need for something sweet and chocolatey, give this nostalgic recipe a go. Your friends/family/guests or whoever is enjoying them will be very impressed, but they won’t know how easy these are to make!

Chocolate Sunflower Seed Butter Cups

MAKES 12 CUPS

Ingredients

Scale

1 cup chocolate chips

6 tbsp sunflower seed butter

1/2 tsp vanilla extract

1/4 tsp sea salt (can omit if there is added salt in the sunflower seed butter)

Instructions

  1. Line a mini muffin tray with mini unbleached parchment baking cups.
  2. Melt the chocolate chips and add 1/2 tbsp of chocolate into each cup. Refrigerate for at least 30 minutes until the chocolate is solid.
  3. In the microwave or over a double boiler, soften the sunflower seed butter so that it is thinned out a bit. Add the vanilla and sea salt and mix well.
  4. Add 1 tsp of the sunflower seed butter mixture to each cup. Add 1/2 tsp of chocolate to cover and refrigerate for at least 30 minutes until the cups are solid.
