This banana bread is quite life changing. Not only for everything it is (moist, flavorful, easy to make) but for everything it is not (it does not taste “gluten free”).

Nicole Hunn over at Gluten Free on a Shoestring is pretty much a gluten free genius. She also has paleo recipes. Check her out!

The best thing about this recipe is it only requires ONE BOWL. Seriously, clean up could not be easier! You don’t even need to use a hand mixer. All that is required is a bowl and spoon or whisk. I recommend baking this bread in a double batch. One for now and one for the freezer. 🙂

I also make this in a flat pan and into bars, which I freeze for my sister to have at college!

I made my version with coconut sugar and goat milk yogurt (instead of sour cream). It is so moist and soft. Her site says 45 minutes to bake but my oven is closer to an hour.

Now, go on and make some.

You need to head to Nicole’s blog, Gluten Free on a Shoestring to get the recipe!

I know you have some overripe bananas in your kitchen!
