Happy Summer! I wait all winter for this season. I finally feel good, I get tan, go on trips, enjoy my pool, and get endless amounts of vitamin D! And how can one not enjoy the late sunset and early sunrise?

I’m very excited to share this meatball recipe that screams SUMMER because of the pineapple chunks you cannot miss. They are a fantastic reminder of warmer weather in winter! They are super simple to make, just like my Simple Paleo Italian Meatball recipe. I usually double or triple the recipe to freeze and reheat for quick meals, work lunches, and even snacks.

This recipe uses pineapple, which I love to use in savory recipes or just eat fresh or grilled. Also making an appearance is coconut aminos, a great substitution for soy sauce  (soy is a GMO crop and has shown to alter hormones).

When I first tried out the recipe, I made half with 1 cup of gluten free bread crumbs and half without. They actually turned out the same, so feel free to leave them out for a grain-free and paleo version!

For entertaining, stick one meatball with a piece of pineapple on toothpicks, or alternate on skewers! Feel free to try out other fruits and veggies, too 🙂 .

Paleo Asian-Inspired Meatballs

MAKES ABOUT 15 MEATBALLS

Ingredients

Scale

1 lb of ground pork

3/4 cup of pineapple (canned or fresh) rough chopped into chunks

1 egg

1 tsp avocado oil or olive oil

1 1/2 tsp sesame oil

1 tsp coconut aminos

1 clove of garlic, minced

1/2 tsp salt

Instructions

  1. Preheat oven to 350°F.
  2. Add all ingredients into a large bowl and mix until combined.
  3. Form meatballs and bake on a lightly greased pan for 40 minutes.
