Sweet Potato Pizza Rounds (Gluten Free, Grain Free, Primal)

MAKES ABOUT 20 SWEET POTATO PIZZA ROUNDS

Ingredients

3 round/meaty sweet potatoes

1 tbsp olive oil

1/2 tsp sea salt

11 1/2 cups tomato sauce (or tomato/nightshade-free version)

11 1/2 cups shredded mozzarella cheese (or goat, sheep, or dairy free cheese of choice)

Optional: additional toppings such as pepperoni, shredded chicken, onions, peppers, etc.

Instructions

  1. Preheat oven to 375°F.
  2. Wash, peel, and cut the ends from the sweet potatoes.
  3. Slice thinly, about 1/4″-1/2″ rounds.
  4. Place on a baking sheet. (Unbleached parchment paper is optional, but makes clean up a breeze). Drizzle olive oil and sprinkle salt, mix with hands, then arrange on the tray.
  5. Bake for 20 minutes, flip, then bake for 10 more minutes.
  6. Remove from the oven, add tomato sauce, cheese, and toppings if desired, then cook for another 5-10 minutes, or until the cheese is melted.

Notes

If using store-bought tomato sauce, look out for hidden gluten, sugar, and unnecessary chemicals or preservatives.

Raw or grass-fed organic cheese are the best options if they are available.
