Plantain, Apple, & Sausage Breakfast Hash

1 pound ground breakfast sausage

2 ripe plantains, peeled and diced

1 large crisp apple, Fuji or similar, peeled, cored, and diced

1 large shallot, diced

Salt & pepper to taste

Instructions

  1. In a large skillet over medium-high heat, brown the sausage until cooked through. Remove from the pan and set aside, reserving the grease in the pan.
  2. Add the diced plantains and shallots to the pan, tossing frequently. Cook until browned, 6-7 minutes.
  3. Add the diced apple to the pan and toss to combine. Cook for another 3-5 minutes, until apples are slightly tender but still have a crunch to them.
  4. Add the sausage back to the pan and toss to combine. Cook for 1-2 minutes more, allowing flavors to combine and everything to be heated through.
  5. Serve as-is, or top with some fried eggs, fresh herbs, or a sprinkle of cinnamon!
