English cucumber

c. grape tomatoes, halved

c. thinly sliced red onion

. Italian flat-leaf parsley, chopped finely
3 Tbsp
. olive oil
2 Tbsp
. red wine vinegar
1 tsp
. garlic powder
1 tsp
. Italian seasoning
½ tsp
. sea salt
1 tsp
. Dijon mustard

Instructions
Peel and slice the cucumber thinly, about ¼ inch thick and add to a medium-sized bowl.
Halve the grape tomatoes and thinly slice the red onion and add to the bowl.
To make the dressing: combine the rest of the ingredients in a jar or bowl and shake very well to ensure the mustard is well-mixed.
Drizzle over the salad, toss, and enjoy.
