Chilled Green Pea Soup

Ingredients

1 yellow onion, chopped

1 clove garlic, minced

110 oz. package frozen peas

2 cups chicken or vegetable stock

1/2 tsp turmeric

1 tsp salt

1/2 tsp pepper

1 TBS olive oil

Instructions

  1. Chop an onion and sauté it with minced thyme for about five minutes.
  2. Add minced garlic and sauté for another minute or so.
  3. Next, add this mixture to the blender.
  4. Add one 10 oz. package of frozen peas and two cups of chicken stock.
  5. Blend until smooth and silky.
  6. Serve garnished with a drizzle of good olive oil and fresh chopped dill.

 

Notes

Optional garnishes: drizzle of olive oil, chopped dill, gluten free croutons, crème fraîche
