I think pizza might the the most universally agreed upon food. At least, in the United States. In a standard American family, there is pizza ordered for birthday parties and Friday night takeout. Celebrating a sports win? Go for pizza. Don’t feel like cooking? Pick up a pizza on the way home from work.

Oh, how nice that freedom must be!

I miss real pizza as much as the next lady, but I have to admit that these Sweet Potato Pizza Rounds are a really good replacement!

One taste tester (read: my sister) said this was her favorite recipe on the blog so far.

 

Sweet Potato Pizza Rounds (gluten free, grain free, primal)

 

Benefits of this recipe:

  • It resembles the pizza you miss.
  • It’s easy to make with only a few ingredients.
  • You don’t notice you are eating some vegetable.
  • They can be easily made on a large scale to feed a crowd.

I haven’t made these for a party yet, but I am definitely going to test them out for football season. If you wanted to get fancy, you could use a football cookie cutter and make football-shaped sweet potato rounds! I just thought of that. Genius.

And if there is a kid out there who doesn’t like these, I’d like to meet that child! Because how can you say no to cheese and tomato sauce and your favorite toppings? Here is one more lunch box/emergency dinner idea to add to the list. These remind me of Bagel Bites that I was obsessed with as a kid!

MAKES ABOUT 20 SWEET POTATO PIZZA ROUNDS

Ingredients

Scale

3 round/meaty sweet potatoes

1 tbsp olive oil

1/2 tsp sea salt

11 1/2 cups tomato sauce (or tomato/nightshade-free version)

11 1/2 cups shredded mozzarella cheese (or goat, sheep, or dairy free cheese of choice)

Optional: additional toppings such as pepperoni, shredded chicken, onions, peppers, etc.

Instructions

  1. Preheat oven to 375°F.
  2. Wash, peel, and cut the ends from the sweet potatoes.
  3. Slice thinly, about 1/4″-1/2″ rounds.
  4. Place on a baking sheet. (Unbleached parchment paper is optional, but makes clean up a breeze). Drizzle olive oil and sprinkle salt, mix with hands, then arrange on the tray.
  5. Bake for 20 minutes, flip, then bake for 10 more minutes.
  6. Remove from the oven, add tomato sauce, cheese, and toppings if desired, then cook for another 5-10 minutes, or until the cheese is melted.

Notes

If using store-bought tomato sauce, look out for hidden gluten, sugar, and unnecessary chemicals or preservatives.

Raw or grass-fed organic cheese are the best options if they are available.
