Coffee Lovers: Rejoice!

It’s safe to assume you reading this have tried drinking coffee once in your life (or maybe you’re a three-cups-a-day-er). And you’ve probably had tea bread (banana, lemon, blueberry, coffee cake…). But have you had them together? Grain free? Refined sugar free? Check and check. You can now get your favorite beverage one more way, in a grain and refined sugar free Coffee Tea Bread.

I go to sleep and wake up feeling a little bit excited about the coffee I can drink in the morning (after my warm lemon water, of course!). Is that weird?

I have always enjoyed coffee for its flavor, not for a constant caffeine kick. Years ago I would say that I drank coffee with cream and sugar. Now, I drink bulletproof coffee and there is no going back. Seriously, if you have not tried bulletproof, make it for your next cup of coffee! See this post for a little background info.

 

Coffee Tea Bread (Grain & Refined Sugar Free)

 

I was a little kid when I had my first taste of coffee. I don’t remember that day, but I can bet it was my Nonni who offered it to me. You probably already know that coffee is like water and wine to Italians. My dad grew up drinking coffee like American kids drink juice.

Growing up, we visited my Nonni in her small apartment in the North End of Boston where my Dad lived for most of his adolescence. After driving around trying to find a free parking spot (near impossible), we parked it in the usual lot, paid the attendant, and walked the few short steps to Nonni’s apartment building.

After being greeted with hugs and kisses and the aroma of Nonni’s kitchen being used to its full potential, us kids played until dinner was ready.

We had her homemade soup with her homemade crusty bread to dip it in. Then her homemade spaghetti, meatballs, and homemade pasta sauce. Am I saying homemade too much?

I cannot explain how good her cooking was. If I had to choose a last meal, that would be it. I wish I could have just one more of those dinners.

Every meal ended with her homemade icing and sprinkle coated sugar cookies and pizellas. Cue the hot pot of coffee! I’m sure my mom would have rather I didn’t have the coffee, but isn’t that what grandmothers are for?

I accepted Nonni’s offer every time we visited for dinner, and later when she moved into an in-law apartment attached to our house and cooked for us at least once a week.

Free Coffee? Contest? Monetary Prize? I’m In!

I love the taste of coffee. So when I was introduced to Kohana Coffee’s recipe contest, I jumped at the chance!

The lightbulb above my head was flickering with so many ideas I wanted to implement.

The rules were simple. Create a unique recipe featuring Kohana’s coffee. I received my bottle in the mail for the recipe creation and got to work.

At the time of writing this, the contest is still open! (Ahem, ahem, you know, if you don’t mind voting for this deliciousness I tested out four or five times before perfecting it… I would really love you forever).

Coffee Tea Bread (Grain & Refined Sugar Free)

Ingredients

Scale

1 stick of butter, softened

1/4 cup of real maple syrup

2 eggs

1 tsp vanilla extract

2 tbsp Kohana brewed coffee (or another variety)

1/4 cup of almond milk (or milk of choice)

2 cups of almond flour

1 tsp baking powder

1/4 tsp sea salt

Instructions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. Cream together the butter and maple syrup.
  3. Add the eggs, vanilla, coffee, and milk, blending after each addition.
  4. Add the salt and baking powder. Slowly add in the flour as you blend everything together.
  5. Fill your loaf pan and bake for 1 hour.

Enjoy with your cup of java in the morning or for a healthier dessert!

Notes

Organic and/or pasture-raised butter and eggs are preferable if available.
